
Protein Tiramisu
If you are a lover of both sweet, Italian cuisines and caffeine like me then this recipe is a match made in heaven and is guilt free in the process. Have your tiramisu and eat it!!!
Ingredients
Cake/base
1 cup of liquid egg white
1 cup of ricotta cheese
½ cup of protein powder (preferably vanilla or chocolate)
2 tablespoons of cocoa powder
6 tablespoons of coconut flour
1 teaspoons baking powder
Topping
1 ½ to 2 espresso shots
¼ cup of ricotta or mascarpone
¼ cup of protein powder
Cocoa powder for sprinkling on the top
Method
Preheat the oven to 175 degrees Celsius
Whisk together all of the base ingredients together with a hand mixer for approximately 5 minutes to let the egg whites aerate,
Then pour the mixture in a baking pan of your choice (line with baking paper and butter for easier removal)
Bake for 10-15 minutes- a knife should be placed into the batter and be removed cleanly (no mess)
To create the tiramisu look, place the base into glass bowls or ramekins then pour ½ shot of espresso on the top.
Whilst this is being absorbed, make the topping by combining all of it by a hand mixer again then place on top of the cake base.
Place cocoa powder on top to finish it off.
Now let it set in the fridge unless you can resist this temptation then obliterate one immediately after completion.
